Hi! Great recipe! I just had drinking vinegar for the first time last night at Tanuki, in SE Portland. It was AMAZING! Where should I go in PDX to get the right equipment to make my own vinegar? I'd love to recreate the pomegranate drink I had last night, and experiment with peach, apple, cherries, (like you), and other berries. Also, I'm interested in using honey instead of sugar. Would honey in the drink still safely keep in the refrigerator? Thanks for posting this recipe!

There's a great book called "the Joy of Pickling" that has a recipe for sour, pickled cherries. It's a great way to preserve and enjoy those Hood River cherries plus the brine that's left over has a wonderful flavor. I drink it with water as well as make vinaigrettes. Can't wait 'til next cherry season :)
